Chicken in Basil Cream Sauce


So this is not a picture of my dinner. This picture is courtesy of TasteofHome.com – where I got the original recipe. We were really hungry and I forgot to take a picture. So I’m sorry… but it was good. Real good. and pretty easy. so i say you should make it!






Ingredients
• 1/4 cup milk
• 1/4 cup dry bread crumbs (I used the garlic roasted bread crumbs)
• 4 boneless skinless chicken breast halves (I used two and cut them in half – also sprinkle some salt and pepper on the little guys.)
• 1 ½ tablespoons butter
• 1/2 cup chicken broth
• 1 cup heavy whipping cream
• 1/2 cup grated Parmesan cheese
• 1/4 cup minced fresh basil
• 1/8 teaspoon pepper

Directions
• Place milk and bread crumbs in separate shallow bowls. Dip chicken in milk, then coat with crumbs. In a large skillet over medium-high heat, cook chicken in butter for about 7 minutes on each side until cooked through. Remove and keep warm.

• Add broth to the skillet. Bring to a boil over medium heat; stir to loosen browned bits. Stir in the cream; boil and stir for 2 minutes. Reduce heat. Add the cheese, basil and pepper; cook and stir until heated through. Serve over chicken.

Instead of pasta, I served this over white rice. The basil sauce can really be served over anything though.
